    Who doesn't love the smell of fresh bread???

    It's something a lot of my guests remark on when they enter the house after I've just baked something - it smells lovely! I do miss the smell of German bakeries over here in the UK and normally make a point when going back to Germany to visit family/friends to shop at a local bakery or at least walk past them sniffing the air ;) Today's bake is a delicious and simple bread made with an old flour variety called Einkorn flour in combination with a rye sourdough and pecan nuts.

    Pasg Hapus! - Easter... Came and went

    We've had a bit of a mixed bag weather wise here for Easter this year - everything from snow to rain to a sunny Easter Sunday, which meant we got to enjoy a lovely walk on the beach. The guests, however, were consistently lovely to host and cater for - we had a truly international weekend with fun and interesting people and dogs - originating from Belgium, Lithuania, the US and Germany.     Christmas is coming ... nearly there

    Isn't it amazing how time flies when you're busy and having fun? It feels a little bit like I've just moved to North Wales on the one hand, but at the same time I feel very settled here in my new home. Well, the calendar says it's December, so I've nearly lived a whole year here in beautiful Penmaenmawr. Winter is drawing in and we even had some snow earlier this month - isn't it pretty?     How to make your own sourdough starter

    I'll be posting one of my sourdough bread recipes this month and thought it might be useful for you to know how to make a starter first of all as you'll need it for the bread recipe. So, choose the flour you want to bake with and mix 10g fresh yeast (any Tesco or Sainsbury supermarket with an in-store bakery will be able to provide this, you just have to ask them for it) with 250 ml luke warm water until the yeast is fully dissolved.     You need the following ingredients for a 30cm x 20cm tray: 1 roll ready made shortcrust pastry 2 large eggs 500g Mascarpone 100g ground almonds 100g white chocolate 100g castor sugar 250g fresh raspberries How to make it: Preheat your oven to around 160 degrees Use a 30cm x 20cm tray - well buttered Place the shortcrust pastry into the form Bake blind for about 10-15 mins until firm to the touch Beat the egg whites until stiff and leave on the side for later Mix the egg yolks

    Time flies when you're having fun ... and keep busy ;) It feels like yesterday - but at the same time, like I've opened my little B&B on the magnificent North Welsh Coast a long time ago.     Moist apple and almond combi - one of my guest welcome cakes - quick and easy to make

    What you need for a 24 inch cake tin: 225g unsalted butter at room temperature 500g cooking apples cut into thin pieces (Bramley are best, I find) Juice and grates zest of one lemon (untreated) 185g golden caster sugar 3 large eggs 225g self-raising flour 2 teaspoons of baking powder 50g flaked almonds for the dough and some for decorating the cake afterwards 1 tablespoon of normal sugar How to make it: Pre-heat the oven to 175 degrees Celsius.
