Oaty Baskets - yummy


Glutenfree healthy breakfast and snack option - easy and quick, but delicious

You need the following ingredients for 9 baskets:

  • 300g rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • a pinch of salt

  • 100ml milk (or dairy alternative like hazelnut drink)

  • 2 large eggs

  • 50ml maple syrup or local honey (depending on taste)

  • 1 teaspoon vanilla bean paste

  • 1 acidic apple of your choice (or, you can use dried apple rings, which make them more chewy) - chopped into small chunks

How to make them:

Preheat your oven to around 180 degrees

Use a muffin form with cupcake cases to avoid the mixture sticking to the form

Mix the dry ingredients together

Beat the eggs together with the syrup/honey, vanilla bean paste and milk until one homogeneous liquid.

Add the dry mix into the wet and stir well.

Gently lift the apple pieces under the mix and evenly distribute across the cases. In my case it made 9 nicely filled ones without overspill.

Bake for around 20 minutes and - if possible - enjoy warm!

You can vary the spice and fruit component to anything you like - try apricots, berries of any kind or even bananas for a different flavour.
