Hazelnut Pastries


New year - new recipe!

Today it's something tasty and not too unhealthy ;)

You need the following ingredients for 24 tasty delicacies:

For the yeast dough:

  • 250g plain flour (spelt is also nice if you prefer)

  • 20g fresh yeast/1 sachet of fast-action yeast

  • 75ml warm milk

  • 1 egg

  • pinch of salt

  • 120g butter (soft)

  • 50g granulated sugar

For the filling:

  • 100g granulated sugar

  • 200g ground hazelnuts

  • 80ml warm water

  • 40g butter (soft)

How to make them:

Mix the dough ingredients together starting with the yeast, milk and some of the flour and let this mixture rest at room temperature for about 20 minutes. Then add the remaining stuff and knead it into a smooth yeast dough that comes away from your bowl

Leave to double in size at a warm place in your kitchen. This normally takes 50-90 minutes.

In the meantime, mix the filling ingredients to a rough paste.

Pre-heat the oven to 175 degrees.

Once the dough has risen sufficiently, knead it one more time thoroughly and then roll it out on a floured surface to a rectangle of about 30x40 cm.

Distribute the filling mass evenly over the pastry to the very corners of it so your treats have lots of it on them.

Then cut into 24 squares, fold them as you can see in the pictures here and put on a baking tray with baking parchment.

Whisk one egg with a bit of milk/cream and a tablespoon of maple syrup/honey and brush the goodies liberally with the mixture, also the hazelnut parts, not just the dough bits!

Bake for 15-20 minutes and leave to cool (or try a warm one straight away?).

If they last, in my household they rarely do, you can either freeze them for a month or keep them in an airtight container for up to a week.

Enjoy with a hot drink of your choice or... if you're a kid - with a fresh glass of milk.
