Who fancies some Buttermilk Waffles?


They've been really popular this month with many of my guests and since I've been asked to share the recipe - well, here goes.

Mind you, people, you'll need a waffle iron for starters ;)

But once you've got one you're off to a simple, tasty sweet breakfast (or lunchtime, or teatime or...) option.

For 5 waffles you need:

  • 1 cup of buttermilk

  • 1 large egg

  • 1 cup of plain flour

  • 1/4 cup of melted unsalted butter

  • 1 tbsp of castor sugar

  • 1 tsp of baking powder

  • 1/2 tsp of bicoarbonate of soda

  • a generous pinch of salt

Mix them all well together with a hand mixer or in your kitchen machine until the dough is smooth. Leave to stand for about 15 mins to give it extra body and flavour before you ladle the mix into the hot and greased waffle iron.

Voila!

See, told you they're easy to make and enjoy.

For my breakfast guests they come with a lovely blueberry mint compote as I think the fruity taste goes very well with the waffles.

Other options are Nutella, jam of your choice, stewed apple, icing sugar, butterscotch sauce and and and whatever you like to eat with them.

If you can't manage them all (they stuff you more than you think!) - they're nice cold, too.
