A new favourite! My recent guests have called these biccies divine and to die for hence the title ;)
So for about 40 biscuits you'll need:
115g unsalted butter
200g granulated sugar
1 large egg
1 tsp vanilla essence
175g plain flour
1/2 tsp bicarbonate of soda
pinch of salt
100g Rice Crispies
150g chocolate chips of your choice
50g chopped walnuts
How you make them:
Preheat your oven to 180 degree Celsius and prepare a baking tray with parchment ready to take your homemade pieces of deliciousness as soon as they're ready.
Beat the butter, sugar, vanilla essence and egg together till fluffy and light.
Add the flour, bicarb of soda and salt until it's a smooth dough.
Pour in the cereals, chocolate pieces and walnuts and stir with a big wooden spoon until all the loose stuff is nicely mixed in.
Drop teaspoons of the mixture onto your prepared baking tray and flatten them a bit before baking them in the oven for about 10 mins until golden brown.
Leave to cool on a wire rack before either eating them straight away (always a good idea!) or store them in an airtight container for up to 3 weeks.
