Marble cookies with a hint of sea salt

As requested by our Facebook followers - here the recipe of the yummy marble cookies Anne made last week for us:

 

For about 40 biscuits you need the following ingredients:

  • 200 g plain flour

  • 80g brown sugar

  • 1 teaspoon vanilla sugar 

  • 120g unsalted butter

  • 1 large egg

  • 30g cornflour

  • 1 teaspoon bicarbonate of soda

  • a pinch of salt

  • 100g dark chocoloate chopped

  • 50g white chocolate chopped

  • 1 tablespoon cocoa powder

  • Bit of sea salt to sprinkle over the top

How to make them:

 

Pre-heat the oven to 180 °C (fan heated oven).

 

First whisk the butter, both sugars until creamy, then add the egg and continue whipping until it’s foamy.

 

Mix the flour, the cornflour and the bicarbonate of soda with a pinch of salt and add to the butter/sugar mixture, stir until it thickens. 

 

Now put around two thirds of the dough in a separate bowl and add the cocoa powder to the rest of the dough and mix well then add both the chopped dark and white chocolate to the cocoa dough.

 

Flatten both doughs into roughly the same shape (whatever you fancy?) and place one on top of the other (doesn't matter which way round).

 

Finally, tear little chunks of the two layers, form little balls (tea spoon size) and place them onto a tray with baking parchment, flatten them a bit and sprinkle with sea salt to taste.

 

Bake them for around 10 minutes until the edges brown a bit. Let them cool off on a wire rack and keep them in an airtight biscuit tin once cool. They can last up to a week if you don't eat them all before that ;)
